- 1 cup frozen mixed carrots, corn & peas, cooked until soft and drained.
- ½ cup grated zucchini, extra water squeezed out
- ¼ cup grated parmesan
- 1tbsp parsley, chopped
- 1 egg
- ½ pouch of Gerber Organic Pumpkin, Banana & Carrot Purée
- ½ cup chickpea flour
- 1tbsp oil for frying

In a medium mixing bowl combine carrots, corn, peas, zucchini, parmesan and parsley. Add egg, Gerber Organic Pumpkin, Banana & Carrot Purée and mix well. Add flour until combined.

Heat ½ tbsp of oil in a frying pan over medium low heat. Using a spoon, scoop rounded scoops of batter and place in the frying pan. Using a spatula press mixture down to flatten. Cook for 4-5 minutes or until golden and crispy. Flip, press down the fritter, cover the pan with a lid and cook for another 4 to 5 minutes. This will cook the fritter through but also soften it. Transfer fritters to a plate lined with a paper towel. Repeat with the remaining oil and until you use up all the batter.
