- 1 chicken breast, boneless and skinless
- ½ cup plain full fat Greek yogurt

In a small saucepan, place chicken and fill with enough water to just cover the chicken breast. Simmer with the lid on until cooked through. (Approximately 15 minutes).
Remove from pot and cut into age-appropriate size pieces.
Mix all the ingredients for the tzatziki in a bowl.
Plate chicken and vegetables then add a dollop of tzatziki.
Reserve extra tzatziki for up to 24 hours in the fridge.
